Protein Miso Soup (31g Protein)

Miso soup at a restaurant is a palate cleanser, maybe 4g of protein in a small lacquer bowl. This version is dinner. Poached chicken breast, a whole block of tofu, and a soft boiled egg bring each bowl to 31g of protein for around 250 calories, which is one of the best ratios on this site.
It is still recognizably miso soup, just with enough in the bowl that you do not need anything after it. One pot, 30 minutes, and most of that is passive poaching time.
Why this works
The chicken poaches directly in the dashi, so the broth gets richer while the meat cooks, and a bare simmer keeps lean breast from going stringy. The one rule worth memorizing: miso goes in off the heat. Boiling drives off the fermented aroma that makes miso taste like anything, so the soup gets assembled, not cooked, in its final minute. The egg yolk acts as a built-in richness when it breaks into the broth.
Ingredient notes
Instant dashi powder (Hondashi is the common brand) is completely fine here and what most Japanese home kitchens use on a weeknight. White miso is mild and a little sweet; if you only have red miso, start with 3 tbsp because it is saltier. Firm tofu holds its cubes in the broth; silken works too but expect it to break apart, which honestly has its own appeal. - Lower the eggs into boiling water for 6 minutes 30 seconds, then straight into iced water. Peel once cool and halve just before serving.
- Bring the dashi to a bare simmer in a pot. Slide in the whole chicken breast, cover, and poach at the gentlest possible bubble for 12 to 14 minutes until it reaches 65C, or until just cooked through. Rest it on a board for 5 minutes, then slice.
- While the chicken rests, add the tofu and wakame to the broth and simmer 2 minutes.
- Turn the heat off. Ladle a cup of broth into a bowl, whisk the miso into it until smooth, then stir it back into the pot. Miso that boils loses most of its aroma, so this order matters.
- Taste and adjust with soy sauce. Divide the tofu and broth between bowls, fan the sliced chicken on top, add an egg half or two per bowl, and finish with scallions.
Tips and storage
The broth, chicken, and tofu keep 3 days refrigerated, but store the eggs separately in their shells and reheat the soup below a boil so the miso survives. This is also a good use for leftover poached or roast chicken; skip the poaching step and just warm the meat through.
