This air fryer dakgangjeong gives you crackly, sticky Korean fried chicken with 44 grams of protein per serving, and a fraction of the oil a deep fry needs. The chicken crisps in a hot air fryer instead of a pot of bubbling oil, so cleanup is quick and the numbers stay lean.

Dakgangjeong is the sweet and spicy cousin of Korean fried chicken. Small boneless pieces get a light starch coating, crisp up, then tumble in a glaze built on gochujang, garlic, and honey. I use chicken breast here to push the protein up, and a double blast of heat keeps the coating crunchy even under the sauce.

It comes together in about 40 minutes and feeds four. Serve it over rice, or with pickled radish on the side to cut the sweetness.

Why this works

Two things make or break dakgangjeong at home. The first is the coating. A thin, even layer of cornstarch (potato starch is even better if you have it) fries up glassy and stays crisp longer than flour, because there is no gluten to go soft. Toss the pieces, shake off the excess, and get them into the heat before they sit and turn tacky.

The second is sauce timing. You reduce the glaze in a wide pan until it coats a spoon, then add the chicken with the burner very low or off. Boil the chicken in the sauce and the coating turns gummy. A quick 30 second toss is all you want, just enough for the glaze to grab.

Ingredient notes

Gochujang is the backbone here. Brands vary a lot in heat, so start with 2 tablespoons and taste before you commit. If yours runs very spicy, pull it back and add a little more honey. There is no clean swap for gochujang, but a mix of sriracha and a spoon of white miso will get you in the neighborhood if you are stuck.

Chicken breast keeps this lean and high in protein. Thighs work too and stay juicier, though they add fat and drop the protein per serving a little. Cut everything into even 1.5 inch pieces so they cook at the same rate.

Cornstarch is the everyday coating. Potato starch, or a 50/50 blend, gives a slightly craggier, crunchier crust if you want to fuss. Honey can be swapped for the same amount of rice syrup, or brown sugar dissolved in a splash of water.

Ingredients
  

  • 800 g boneless skinless chicken breast about 1.75 lb, cut into 1.5-inch pieces
  • 1 tbsp soy sauce for the chicken
  • 1 tsp grated fresh ginger for the chicken
  • 1/4 tsp black pepper
  • 1/2 cup cornstarch about 64 g; potato starch works too
  • cooking oil spray for the air fryer
  • 2 tbsp gochujang Korean chili paste; adjust to your brand's heat
  • 2 tbsp honey
  • 1 tbsp soy sauce for the sauce
  • 1 tbsp rice vinegar
  • 1 tbsp brown sugar
  • 4 cloves garlic minced
  • 1 tsp grated fresh ginger for the sauce
  • 1 tsp toasted sesame oil
  • 2 tbsp water
  • 1 tbsp toasted sesame seeds to garnish
  • 2 scallions thinly sliced, to garnish

Method
 

  1. Pat the chicken dry and toss with 1 tablespoon soy sauce, 1 teaspoon ginger, and the black pepper. Let it sit 10 minutes while you make the sauce.
  2. Whisk the gochujang, honey, 1 tablespoon soy sauce, rice vinegar, brown sugar, garlic, 1 teaspoon ginger, sesame oil, and water in a bowl. Set aside.
  3. Add the cornstarch to the chicken and toss until every piece is lightly and evenly coated. Shake off the excess in a colander so there are no dry clumps.
  4. Arrange the chicken in a single layer in the air fryer basket, pieces not touching. Spray the tops generously with oil. Air fry at 400F (200C) for 12 minutes, flipping and spraying again halfway.
  5. For extra crunch, air fry a second time at 400F for 3 to 4 minutes until deep golden and crisp. Work in batches if your basket is small.
  6. Pour the sauce into a large wide pan over medium heat. Simmer 1 to 2 minutes until it thickens and coats the back of a spoon.
  7. Turn the heat to low or off, add the hot chicken, and toss quickly for about 30 seconds until glazed. Do not let it boil in the sauce or the coating softens.
  8. Tip onto a plate, scatter with sesame seeds and scallions, and serve right away.

Tips and storage

Dakgangjeong is best within an hour of saucing, while the coating still has bite. If you are meal prepping, store the fried chicken and the glaze separately. Keep the plain fried pieces in the fridge up to 3 days, reheat in the air fryer at 400F for 4 to 5 minutes to re-crisp, then toss with warmed sauce right before eating.
